Pancake day - invitation

Wow - it's Shrove Tuesday tomorrow. I just realised that I don't have a recipe for pancakes. (I prefer them thin and crepe-like). Can anyone oblige?

I have a few ideas for toppings, both savoury and sweet:
  • Icecream
  • Strawberries, apples and black pepper
  • marshmallows and chocolate sauce
  • bolognase sauce
  • cheese and tomato

Anyone else got any suggestions?

I might be tempting fate, but if I were to offer to cook a few, who would be interested in attending?
I'm aiming to start around 1930-2000ish.

Hmm. Just had a thought. It'd most likely mean missing the quiz - I'm planing to start at 8pm.

We aren't doing the quiz due to the fact we'll have no team. Reading week and all that. I'm most likely going to be ambling over to The Other House later in the evening anyhow as it's Charlie's birthday.

I don't know how to make pancakes. I was asking for instructions, but Google has since been of use.

Yup, that's fine. I've been telling people 8pm, but you can come over before if you like. And if everyone is here early then we'll eat before then :-)

Mashed banana, natural yogurt and maple syrup. You cannot get more yummy! :)

Pancake recipe from GCSE days - hope it's in time

The basic recipe is (imperial measurements, I'm afraid):
4oz plain flour
10 fl oz milk
1 egg.

Factor up as much as you need - the above is usually enough for 1-2 people.

Sift the flour into a large enough mixing bowl and make a well. Beat the egg(s) in a cup or smaller bowl and pour into the well. Stir carefully with a wooden spoon until the egg has taken up enough flour to become unmixable. Rinse out the eggy container with some of the milk, and pour into the mix. Stir again until it's too thick, and repeat. (If you don't have the hour or so to spare, a balloon whisk makes things a lot easier but can lead to lumps.). You ought to end up with a very thin batter. Let it settle for half an hour, and then mix again.
In a suitable frying pan (non-stick, 6-8" diameter, low sides), heat enough lard or oil to just cover the sides, and wait for the smoke. Pour in a small amount of batter, whilst simultaneously tilting the pan around to achieve an even coating. Put on a medium to high heat and wait for the edges to begin to brown. Loosen with a shake (failing that, a non-metal spatula) and gently toss to cook the other side. Repeat until the batter's gone or everyone's got enough.
